Depending on the type of Vegas visitor you are, you might want to catch a specialty show like the "B - A Tribute to the Beatles", "Zombie Burlesque", "The Mentalist", or take the "Stripper 101" class, or, for a sample of the kind of Vegas showlife that gave Vegas the name of "Entertainment Capital of the World", consider seeing "Vegas! The Show" or "V - The Ultimate Variety Show".
